You can easily make this recipe with my Bliss Cannabutter or find many alternative infusion options explained below.

In this guide, you will find my mouth-watering recipe for chocolate mint cookies, a step-by-step guide, notes, and expert tips to make this recipe perfect the first time.

Ingredient Notes

  • Flour: white, all-purpose flour works best in this recipe
  • Unsweetened cocoa powder; use dark chocolate if desired
  • Baking soda: don’t confuse this for baking powder
  • Salt: kosher salt or table salt works
  • Cannabutter: Start with my Bliss Cannabutter or make your own ahead of time. The cannabutter should be softened to room temperature for the best results. You can substitute cannabis coconut oil here, but it should be at room temperature. You don’t want to use melted butter; you want to be softened. Learn how to soften cannabutter here safely.
  • White sugar: If you want, you could substitute cannabis sugar
  • Brown sugar: If you don’t have brown sugar, use a full cup of white sugar
  • Eggs: for consistency
  • Vanilla extract: for taste
  • Mint chips: One cup of mint chocolate chip seems perfect, but add more if you want a higher ratio. If you don’t want mint, semi-sweet chocolate chips, chopped chocolate, or white chocolate chips will also work. Want an extra potent batch? Try cannabis-infused chocolate.

Step-by-Step Instructions

  • Step 1 – Preheat the oven to 375°F/190°C. Line two cookie sheets with parchment paper and set them aside. A greased baking sheet will work, too.
  • Step 2 – Whisk the dry ingredients: flour, cocoa powder, baking soda, and salt in a medium bowl. Set this aside.
  • Step 3 – In a separate large bowl or a bowl of a stand mixer with a paddle attachment, cream the cannabutter and both sugars with an electric mixer on medium speed until light and fluffy, approximately 2-3 minutes.
  • Step 4 – Add the egg and vanilla to the creamed butter bowl.

  • Step 5 – Starting at a low speed and gradually increasing the mixer speed to medium-high speed, beat well with the mixer. Scrape the sides of the bowl if needed.
  • Step 6 – Gradually add the dry ingredients to the wet ingredients while mixing.
  • Step 7 – Mix until all ingredients are well incorporated and a dough has formed.
  • Step 8 – Fold the mint chips when the cookie batter has formed.

  • Step 9 – Create one tablespoon-sized cookie dough ball using a #70 scoop and place them evenly 2″ apart on the reserved parchment-lined baking sheet. A scoop help ensures equal portions and better dosing.
  • Step 10 – Place the trays in the oven for 7-10 minutes. See baking notes below.
  • Step 11 – Remove the baked cookies from the oven and allow them to cool for 1-2 minutes before removing them from the cookie sheet and transferring them to a wire rack or cooling rack. If you want to get fancy, drizzle melted chocolate on top of each cookie.
  • Step 12 – Enjoy!

Storage Instructions

These chocolate mint chip cookies have the same shelf life as any other cookies. Store in an airtight container at room temperature for up to 7 days. Freeze after seven days to prevent spoilage.

Additionally, storing these cookies in an air-tight container with a slice of bread will keep them soft and moist. Place a piece of wax paper between the layers if you have drizzled chocolate on top of the cookies.

Below we will explore how you could infuse these mighty little treats with your favorite secret ingredient.

Cannabutter

Using cannabis butter is the most popular way to infuse your favorite recipes.

It’s easier and most cost-effective to buy my Bliss Cannabutter, but there are many ways to make it home.

Whether you start with unsalted butter or ghee, you can infuse in a crockpot, Instant Pot, stovetop, or infusion machine.

You can use traditional flowers, trim, or fan leaves, or specifically, make CBD butter or kief butter. Just don’t grind first.

Remember, if you use unsalted butter, separation may occur. And don’t worry about the green color; color is not an indicator of potency.

You can adjust the amount of cannabutter used alongside regular butter to control your dose if needed. Use a ¼ cup cannabutter and ¼ cup butter for a less potent option.

Cannabis Oil

One of two classic staple recipes for every kitchen: coconut oil is a dairy-free alternative to cannabutter.

Coconut oil stays solid at room temperature, so it’s perfect for this recipe and creams together with the sugar.

Note: Other oils, like MCT oil or olive oil, may negatively affect the final product.

Cannabis Sugar

You can make these cookies with cannabis-infused sugar if you have some on hand.

Simply swap the infused sugar for white sugar.

You could also use infused oil or butter and infused sugar for an extra potent batch of cookies.

Concentrates and Extracts

Easily make these cookies with concentrates like distillate or FECO.

Just be sure to check if your concentrate needs to be decarbed first.

Then, mix the concentrate with ½ cup of normal butter or organic coconut oil, and then prepare the recipe according to the instructions below with your butter mixture.

Notes and Expert Tips

  • Baking note: All ovens bake at different temperatures, and 9 minutes is the average baking time. Some ovens will bake quicker, so check your cookies for your desired doneness between 7-10 minutes. Some may need as long as 11-12 minutes. Bake time will also depend on the size of your dough balls. Small balls will bake faster than larger ones. Adjust accordingly to find your perfect texture. Don’t be afraid to bake an additional minute if needed.

Is 375°F too hot to bake edibles?

No, it is perfectly OK to bake the cookies at this temperature, as the cookies never get this hot.

Can I make this cannabis cookie recipe gluten-free?

So many great gluten-free flour alternatives swap pretty well for traditional all-purpose flour. You can grab gluten-free all-purpose flour at most grocery stores. This is the all-purpose gluten-free flour I recommend for gluten-free baking. I have not tried almond flour, oat flour, or other gluten-free options.

How to calculate the mg of THC in each cookie?

If you’re using cannabutter, your first step will be to know how much THC is in your batch of cannabutter. This will depend on the strain you use. The best marijuana strains like Durban poison, OG kush, or thin mint girl scout cookies can be upwards of 18-20% THC. Use my popular dosage calculator if you need help with this. If this is your first time, know that you will need to know how much cannabis you added in weight and how potent it is in percent.

Can I use fresh mint?

Yes, if you really want to, feel free to add very finely chopped fresh mint leaves. You can also use peppermint extract, peppermint essential oils, chopped candy cane, or Andes mint candies in this recipe as the primary flavoring agent.

Instructions 

  • Preheat the oven to 375° F. Line two baking sheets with parchment paper and set them aside.
